INFORMATION on beef butchery techniques, recipe ideas and regional
beef breeds are all contained on a unique CDROM produced for
caterers by the English Beef and Lamb Executive (EBLEX).
Distributed to catering members of the EBLEX Quality Standard
Scheme, the CDROM aims to inform and inspire chefs about beef as
a quality ingredient.
Issued as part of the recent EBLEX St George's Day 'Heroes' Campaign,
the beef CDROM is the sister publication to EBLEX's highly successful
'Lamb: Our Culinary Heritage' CDROM, issued recently to the catering
Food Service Project Manager for EBLEX, Hugh Judd, said: "We
know that chefs and caterers are busy people, always looking for
new recipe and preparation ideas and information on food provenance.
"The overwhelming reaction to the EBLEX lamb CDROM showed
there is a real need for this sort of information to be made available
in a concise, easy-to -use format. This new beef CDROM means caterers
and chefs can add value to their customer offering on the plate
and on the menu - and helps drive demand for Quality Standard beef."
